- 2 Ingredient Vegan Feta Cheese -
My go-to vegan feta cheese I use whenever I make a Greek salad or any other salad that needs a feta is this tofu recipe. Tofu does not really have any strong flavor and is high in protein so it makes for a perfect cheese substitute. Tofu is a great staple ingredient to have in your refrigerator if you are trying out a plant based diet. You can create so many different recipes with it. To get a texture similar to actual feta I suggest starting off with firm tofu and then pressing all the water out of the tofu so it feels dry like feta. My favorite salad to enjoy this feta with is Greek pasta salad or a Summer Berry Balsamic Salad that you will see a video of soon, which is such a delight during the summer!

- One 16 oz. block of firm tofu
- 2 tbsps salt
- Optional: 1 tsp lemon juice
1) Drain the tofu. You may press the water out of the tofu with a towel if you want the tofu to feel somewhat dry like actual feta but this is optional though. Crumble the tofu into feta like pieces into a bowl.
2) Add some salt to the bowl and mix with the tofu. Taste the tofu as you add more salt. Feta tends to be salty so be generous with the salt. You may add lemon juice for a slight tang or marinate the tofu in olive oil and Italian herbs but that is optional.
